Summer is here, summer is here! This is one of my all-time favorite Summer recipes, and I've been making it for years. It is THE taste of Summer to me. The original recipe comes from one of my favorite cookbooks, Eating Well in Season and it's honestly so perfect I don't think I've adapted it too much...primarily just the bread preparation. This is one of those dishes that is perfect for a romantic dinner for two out on your patio on a warm evening or great for a Summer party since it scales up well and doesn't need to be served warm.  It's easy to make, healthy and super delicious...this is one recipe that you'll keep in your Summer rotation for years to come.

Disappearing Zucchini Orzo with Grilled Shrimp

This is an oldie but a goodie that I found years ago when I read one of my now favorite books Animal, Vegetable, Miracle by Barbara Kingsolver. It is a super simple, healthy and delicious dinner.  Perfect for a warm summer night…particularly late summer when you're just starting to get sick of zucchini.  If you eat seasonally like we do, in the early summer it's hard to imagine you'll ever get sick of zucchini since it's been so long since you've had it…but it can happen!

So if it happens to you whip up this dish,  because as the name of it suggests, the zucchini kind of disappears within the orzo and it helps you use up lots of zucchini if you're lucky enough to have one of those neighbors who keeps bringing you baskets- full!  It's also a great dish if you're trying to sneak some veggies into the kids as I know you parents often need to do.

Shrimp & Artichokes over Parmesan Grits

This is an oldie but a goodie, honestly probably one of the earlier “gourmet” recipes when I was in my early days of cooking.  It was these types of early simple dishes that gave me the confidence in the kitchen and gave my now husband the confidence to propose to this gal who was starting to feed him so well!  This is quick and easy for a weeknight but satisfying meal.
Puff Pastry & Pesto Salmon

I was having a strange craving...I had a vague memory of a shrimp newburg dish I made for my parents back when I was in college and that somehow translated into me craving puff pastry and salmon together. Not exactly linear, but I had been thinking about it for a week and could fight the craving no more.

So I went to one of my new favorite website, (which stands for Food I Love You, cute huh?) and typed in “Salmon” and “Puff Pastry”...viola! Several recipes instantly appear that have those two items as ingredients. I chose the Giada recipe below simply because I had lots of Basil in the house that I needed to use up and some leftover pine nuts from something and her recipe called for pesto. I also already had everything else in the house which is always a nice bonus.
DIY Fish Tacos

The original plan was to make a different fish recipe tonight since we had tortilla soup earlier in the week, but what can I say...sometimes we get in a Mexican mood and we just can’t get out of it!  We always joke that in our past life we must have been Mexican.  Anyway here is my general approach for fish tacos...pretty simple DIY night.
Chinese Steamed Fish

This is a super easy and delicious way to prepare white fish so it’s healthy and flavorful.  Great for weeknights!  We often serve it with bok choy or broccoli cooked with a bit of sesame oil & sprinkled with sesame seeds (although we did roasted Rapini tonight) and some kind of whole grain.
Orange Fennel Steamed Salmon with Roasted Winter Veggies
This is a DIY night turned into a Suzanne original (this only happens if the meal turns out exceptionally good, which Christian & I thought this was!).  The inspiration for this one came from the recent Farmers’ Market trip where I got some Fennel & Pink Navel Oranges (delish!)...I was originally thinking I would just do a standard shaved fennel and citrus salad but then had the idea to make it into a more complete meal while also trying to use all parts of the fennel.  So here is what I did:
Wasabi Mustard Fish with Whole Wheat Cous Cous & Steamed Broccoli
This is a DIY night so feel free to wing it and do whatever you would like with fish (we like Tilapia, Halibut and Red Snapper), grain and a veggie. I have this delicious Wasabi-Sake Mustard from We Olive that I am going to use as a bit of a marinade with some salt and pepper and then just pan fry it and serve it along with whole wheat cous cous and broccoli steamed with a bit of ginger and sesame oil. Nice and easy...enjoy!
