This is a newly created dish based on some random ingredients I had in the house that I wanted to use up...but it came out pretty delicious so I thought I'd share! Really easy and straightforward as long as you start it first thing in the morning. This is the approach I took, but in the spirit of DIY feel free to experiment based on whatever ingredients you have on hand!
First, I seasoned the pork loin generously with salted, freshly ground pepper and garlic and seared it on all sides and put it into the crock pot.
Pour a bit of water in the hot empty pan to de-glaze, then sautee 2 whole sliced onions with a big bunch (~handful) of chopped fresh sage for about 10 minutes...just until slightly softened.
Pile the onion & sage mixture on top of the pork in the slow cooker. Add a can of peach nectar and 1 bottle of beer (the more full-flavored the better. We used an amber ale) over it, cover the slow cooker, set it on low and let it cook for 10 hours.
We served it on top of slices of grilled sourdough sage bread (part of the inspiration for this from a local bakery) and a side of sauteed swiss chard with walnuts.
